Home-made French Dressing

I love a good French dressing for salads but so many of the store bought dressings are so full of acid they burn the mouth. Here's a recipe that's as simple as it is great to eat and doesn't leave you wondering if nitric acid wad used in it. Its my favorite now.

mix together the following in a large bowl:

1/3 cup of ketchup
1/2 cup white wine vinegar
3/4 cup of sugar
2 tsp salt
1 cup canola oil
1/2 of a medium red onion, finely chopped

I blend all of the liquid ingredients first, then add the onion. Use a wisk to mix this and the oil will blend very nicely. Use this right away, but any left can be refrigerated for a couple weeks or more.

And if you like a french - blue cheese dressing, just add some blue cheese crumbles to this and dig in. The blue cheese should be added to serving sized portions of the dressing and allowed to stand for a couple hours before using. Don't add the cheese to the entire batch unless you plan to use the entire batch.
