Caramel corn

Seemed like a good thing to do today long with a big batch of chili. Instead of pop corn I use Old Dutch Puff Corn. Did a double batch. The recipe is on the package but if anyone is wanting a great caramel corn coating recipe here it is.

1 cup of butter
1-1/4 cup of dark brown sugar
2/3 cup of white corn syrup
1 tsp of baking soda

Combine the first three ingredients in a LARGE saucepan and cook over a medium low heat until all of the ingredients are combined. Stir often until it gets to a very slow simmer then stir in the soda and mix in we’ll. The soda will cause the mixture to foam. Have the corn or puff corn in a large toaster and pour the caramel over it and quickly stir it all together trying to coat all of the corn. Have the oven set at 250 and slide the roaster in for 45 minutes, taking it out every ten minutes or so to stir again. After the 45 minutes pour the corn out on a large cookie sheet, spread it out and allow to cool. Then have at it. As Maynard would be told, good stuff.

No calories in that stuff? eh! :D :D
