Bacon is done so.....

I started right in with the venison jerky. Then on to the sticks. 57 pounds of sticks. Just got them all stuffed up. Tomorrow the smoking brigade gets put in motion.

I fried up the stuffer plug and had it for lunch. All I can say is that I will have a lot of very good snacking this year.

I just finished the smoking. Now they're going to hang a couple days to further dry, then getting vacuum sealed for the freezer. One broke off while hanging and I of course wiped it off and promptly took a bite. One word sums up how they taste: damn!

Here they are hanging to dry out a bit. Another three days maybe, then they'll get cut to length and vacuum sealed. This hanging string is over ten feet long.
