Vennie sticks are a wrap....

I started out with 25 pounds of a 50-50 pork-venison mix, and ended up with 20 packages of full sticks and 5 packages of ends and trim. All vacuum packed and freezer ready. These were stuffed into 21mm casings instead if the customary 19mm and I'll never do the 19's again. The 21s make a much nicer stick and are sooooo much easier to stuff.

They taste amazing this year. Real happy with the way they turned out.

I got 27 pounds of jerky sliced, cure added and seasoning added today. I might start drying the thinner pieces tomorrow. I like to cut my jerky into strips about 1/2" thick. The oven is going to get a workout this next week. Give Carole something to yap about. lol
