Zucchini Bread

It is that time of year where zucchini is abundant and we had a ton so decided to cook up some zucchini bread muffins



1.5 cup flour
1 cup sugar
1/4 cup apple sauce
1 cup shredded zucchini
1/4 tsp. lemon juice
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. Nutmeg
1/4 tsp. salt

Preheat oven to 350
I used a muffin pan, spray with Pam and filled 3/4 each. Cook time was 1/2 hour. or till toothpick pulls out dry. Let cool on rack.

Note; I also used 2 cups of Zucchini and had to thicken batter slightly with more flour

Those look just like what Carole makes and that recipe look an awful lot like her's as well. She whipped up a blueberry-lemon cake/bread this morning and I think I've found a new favorite....at least until its gone. lol
