When I got this all mixed up in the kettle to simmer I added some Zataran's Creole seasoning. WOW. That made this soup turn a corner. Very, very tasty.

My wife made a wonderful philly cheese steak tonight that the spot.......until I saw this, man I love Cajun food. That looks terrific Tom! I about licked the phone screen when I saw it I wanted some so bad.I may have to sneak off for some Cajun for lunch one day this week now. Cajun food is hit and miss with the rest of the family so I don’t get it often. I haven’t meet any of it yet I don’t like. Crawfish, gator, etouffee, Po Boys, jambalaya, red beans & rice. I could go on and on has to be one of my favorite types of food.
