Title: Baked Parmesan Crappie

This recipe was taken off the Crappie.com board. It was submitted by Longhorn
1 or 2 eggs
3/4 c. Panko Bread Crumbs
1/4 c. Parmesan cheese
1/4 teaspoon ground thyme
Fish Fillets
1/4 c. butter
(optional) American cheese slices.

1. Prepare egg wash, In a separte bowel mix bread crumbs, Parmesan cheese and thyme. Dip fillets in the egg wash then in the dry mixture (I like to put the dry mixture in a zip lock bag abd shake the fish in this) Put fish in a baking dish and drizzle the melted butter over them. Now longhorn said ti set the oven at 500 degrees, seems to hot to me, I set at 350 degrees. Bake about 15 minutes or until the fish starts to flake. (About one or two minutes before thr fish are done, I like to take the pan out of the oven and top with American cheese slices, return to oven just long enough for the chees to melt.)
     Now I like my fried fish, but being a diabetic on pills, Im not suppose to have fried foods. This is the ONLY baked fish recipe that I have found that tastes as good as fried fish!! I can eat this once a week. Ihave fixed this with all the panfish, walleye and also catfish and it is great!

I was ok 'til I read this.  Grumbling Gut now!  Too bad I broke my SpinFly the last time I was home or I'd have to go chase dem Sacalait.  MmmMM!
