Walleye Lasange

I make this with walleye fillets,but your favorite fish will work.
Start by sauteing 1 med sweet onion,and 2 cans of mushrooms  (fresh ones are better) no such thing as too much here!
After they`ve glazed over,melt in a pkg.of cream cheese,salt & pepper to taste,I like Tony Chachere`s Creole seasoning in place of the salt.
Grease the bottom of a 9x11 cake pan,and put 1 layer of fish down to cover the bottom.
Than add the onion mixture,and spread all over the fish.
Put your favorite breading on another layer of fish (enough to cover the pan again)
Cover the mixture with this fish,and maybe more creole seasoning? good stuff!
Cover the pan with aluminum foil and bake in a oven preheated to 350
After 30 min.remove the foil,and POUR melted butter over the top. (about 1 stick)
Put the pan in the  broiler this time for about 3-5 min. watch closely,it will brown over nicely. Enjoy!!

Simple breading that`s really good;
1 box cheap corn flakes
1 box cheap rice crispies
1 box saltine crackers
In the blender do 1 box at a time until reduced to a course powder
The cereal will be about 1 cup each,mix together for a total of 3 cups. (all equal amounts)

This is a great recipe. I have had it for several years and I make this using crappie fillets and in a smaller pan [9" X 9"].

Do the fresh mushrooms. Great eating here.
