Looks like he hand poured the red color.   
Good chance that color maybe in the cook book.  Jr is very good with colors.

I'd say the chartreuse was shot, then trimmed for the tail piece. The tail color went back in the mold, a plate added and the red shot. Then the bait was finished with the dark color.

It looks like the tail on the lower left carrot may have been cut on the bias which give it a different look.

Maybe. It could be that the red plastic shot under the edge of the tail color too. I saw that right away but we won't know without the bait in hand. Looks good anyway.
