We dehydrated a number of things with liquid nitrogen back in the 1980's -- ( be very careful; and have someone who knows what they are doing ). We dehydrated crayfish, worms, crickets, shrimp, shad, catalpa worms, chicken livers, etc.. It is easy to do; IF; you have the exact right equipment and - Know what you are doing. I was a bystander. The shrimp and cricket "dust" seemed to work fairly consistantly in an oil suspension. The others were more spotty in their performance; of course that could be "operator error". I had high hopes for the chicken liver "dust" in doughballs; but it just didn't come together. We "concluded" the loss of inherent oils via the drying process was the culprit.
