Next up.....hot sauce

I've been picking the hot peppers as they turn bright red, rinsing them off and then nipping off the stem end. Then the get put into a gallon size freezer bag with all the other hot peppers that have ripened ahead of them. When the pepper growing ceases, I haul out that bag and thaw those bad boys. Next I add a cup of white vinegar to the food blender [be smart and buy a good used one to dedicate JUST to this purpose] and start pureeing them. Do this until the peppers are all ground up.

Now put the peppers/vingar mix in a 5 quart covered kettle and put on the heat using a camp stove out in the garage. Actually everything discussed here should maybe be done in the garage after the peppers leave that freezer bag. I have a large 3 burner propane stove that came out of an ice shack years ago just for such occasions. Add a bit of salt, not much, to the pepper mix and simmer this [covered] for maybe an hour or until the pepper mix is soft enough to run thru a food mill. Toss the seeds left in the food mill, but return the sauce to a smaller, un-covered sauce pan and simmer, stirring often, until the sauce is as thick as you'd like it. I like mine about the consistancy of Tabasco. I put the sauce up boiling hot in 8 ounce jelly jars and  seal with covers from a very hot water bath.

What you end up with depends upon the peppers you use. My first batch this year has a flame-thrower decal on the jar so Ma doesn't confuse this with her ketchup. After trying a sip out of a teaspoon, I'll be content to dip a toothpick in the sauce and just wave it over my scrambled eggs....should last a good while.

Now if you'll excuse me, I have to go get another glass of iced tea.

    Hey Tom,
    That sounds like some real good stuff you are fixing there....As for the heat, and removing the flame thrower from your tongue, Here's a little trick I learned while staying in Laredo, Tx and eating a lot of hot peppers. When you get something that burns your mouth like that, take a slice of bread and tear it in half, and put it in your mouth. Don't chew it, just hold it between tongue and the roof of your mouth. If by chance the first piece doesn't remove all the heat, repeat the procedure. It does work. it absorbs the oil of the pepper that is the culprit of the fire....have used this more than one time. Denny just calls it "hot footin". Mo is pretty close to Cajun with those nifty chartreuse PF Flyers he was wearing [ tennis shoes for the younger set]. The only people I see wearing those are basketball studs and felons, but he didn't appear to be either. Maybe he got those for cooloing his lower unit off after a dinner of Thai hots? You there Mo?

  Tom, My sister came in to see what all the laughter was about in here and read over my shoulder the situation. she had two suggestions.....ICE CREAM, or a fire extinguisher.....lol

I would imagine after hearing and seeing Mr. Tom and friends it would be hard to gauge his/their tolerance toward the hot stuff due to the extreme northern location. I would venture to say any thing hotter than a jelly bean would sent those yanks running for a cold glass of sodie pop  ;D its a good thing Iowa didn't check my pass port to see I live below the mansion dixon line I would of hated to go on trail for war crimes lol
 My dad asked me what a yank looked like...... well dad, pretty ugly and talk all kinds of weird but all in all they ain't a bad  breed. Heck I would break bread and share a boat with em any time. I just told him don't tell my momma that  :P
  I knew I was in for it with those shoes lol  my boots were in my truck and the wife took it to work so I could use hers. My shoes are bright like my IQ and personality. You talk to any crappie fisherman and their favorite color is chartreuse so why not have a pair of tennie sneaks that represent my favorite bait  :) I tell ya I can't remember when I was around a better group of people and that's a fact

Hence Mo....single syllable and you still can't spell it right. I'm sure glad Drew kept you under control. I was worried when you came thru the door sucking on that dark object. Turned out to be a tootsie roll, but I thought maybe you'd been picking up after the black lab I saw pointing in the parking lot. Really though, if there was ever any question about your stability, the green shoes took care of any clarifying.

Make no bones about Mo. He is one super great, stand up person. I sure enjoyed your company.
