Soften an 8 ounce package of cream cheese in a bowl. Chop a couple cloves of garlic and a large shallot very fine and add to the cheese. Chop about 1/2 pound of pinache leaves sort of fine and add to the cheese. Add some salt and pepper and mix well. When well mixed, add 6 ounces of coarse shredded parmesan and mix well.
Spoon a tablespoon of the cheese mixture into cooked and drained large pasta shells. Put the shells in a pan and add your favorite spaghetti sauce, drained mushrooms and maybe some browned, drained Italian sausage. Top it off with a package of mozzerella cheese and bake 1/2 hour at 350 or until the topping cheese is just melted but not browned.
Makes a great side dish or if you are anything like me and pasta....its my main course and is served with some thick sliced and toasted french bread done garlic style using real butter and pressed garlic. No vampires here at our house.....then too there's no company either. lol
