Last night for dinner Carole and I tried the ring bologna from this year's deer and it was just plain good. This morning I decided to bring in the short chub of summer sausage and try a nice, thick slice and and herein lies a problem: I won't be able to leave this stuff alone. Man did the summer sausage come out great. Some cheese and crackers, a few slices of the sausage and a half a glss of that raspberry vino and a cold winter's evening could warm right up. Both sausages eclipse those of last year and they were very good.

Lets see, if I cook a ring a week and enjoy half a chub each week, I'll last 24 weeks. I might even be able to make the wine stretch out that long if I can keep the handcuffs on Ma.

Go ahead and rub it in, the deer (if thats what you can call them) down here, are about the size of a German Shepard. They pretty much are a meal for 4 if you don't go back for seconds. If 24 weeks is to much meat for you, you can send some my way!

Ctom, take some onions, tomato's and the ring bologna and mix it with a little Italian dressing.. Let it sit marinate for a day and its a killer snack!!
