I fish a little of everything so it's important for me to have a wide range of colors. Having 1 of each color class (blue, green, red, yellow, orange, etc) and black and white for shading is more important to me than having 3 greens and 3 browns. For regional hot colors, ask the people who want to buy them what colors they want.

Hot colors pretty much everywhere:
Watermelon/red & watermelon candy... pretty much watermelon anything.
Black & blue
Junebug & junebug/chartreuse
pumpkinseed, pumpkinseed w/ chartreuse tail or orange tail for worms.
Don't be afraid to put your own spin on it. I'm using motor oil instead of pumpkin and it's a great sub and a hotter color for me. Green or violet hilite to the motor oil steps the color up nicely. Motor oil orange has been a knockout color on waters where pumpkinseed orange has failed. Lamar mentioned Caney Creek Green. What about using that instead of watermelon for watermelon red and watermelon candy? Might flop or might be a hotter color.
As for selling your baits, don't undercut the big guys. What you do is more costly, even w/ low overhead. At least match their price, asking more isn't absurd. 2nd and most important, excise tax is required for all fishing bait sales. Avoid a fine and look into it. A number of guys here are probably willing to help you out with that. If it's more $ to get the permit than what you're going to sell, then don't sell baits. Give them away or trade them.
