How do you guys choose the eye color for your plastic baits? Anything with chartruse or yellow I use a gold eye. Otherwise I usually stick with silver. Does it make any difference?

I think it does make a difference.  Many do; a fair number do not.
If trying to imitate a particular prey, I will use the eye color of that prey surrounded by a little contrasting color on the head.  If not a particular imitation; I usually will do one of two things.  Either the eye color of the predominate food source for the fish targeted, or a contrasting eye versus the "head color" that the eye is applied to ( either the bait or jig head ).   Prey try to camouflage their eye's from the predators.  I try to emphasize the eye.  This is for most fresh water fish.  Salt water in clear open water it's match the prey all the way. Inshore, it can go either way.

I like red eyes.  It gives me confidence because I think the predator fish perceives weakness or distress.  I have no idea if it really matters but this is Jimmy Houston's theory and he has been fishing at a high level a long time.  Then again, maybe he has kissed one too many  :-*

I don't know how much it matters, but I try and match the hatch.  I figure you can't go wrong emulating the real thing.

I have read about eye size mattering. Larger eyes seem to trigger some type of response.

Never have really thought about eye color. I always go with what looks good to me... maybe that is why I don't catch????;D

I tend to agree with Jason re "matching the hatch".  If you don't know what the hatch looks like, however, do what looks good to you.  I think it's all about you having confidence in the baits you make.
Until next time.

I pretty much just try to use a contrasting color. I tend to like over-sized eyes when I use eyes.
