Just curious about likes and dislikes using infrared vs meat thermometer.

If its a mercury thermometer I'd use one in some cases . But I use infra red . What i really would like to afford is thermal digital setups for everything . I have a couple lee pots that are driving me crazy . Can't stand presto either .

I like immersible digital thermometers when using lee pots, I feel it is more accurate than the IR.
When using the micro, I use my set times according to volume and use the stir stick to decide if it needs another 20-30 seconds

Have two digital thermometer's one from sears and one from harbor freight. They never read the same.

You have to love that.  Just don't make the mistake I did once and have it set for Celsius...  I scorched it.

Same here! Jason, do you think the infrared will pick up on bad circuits in the breaker panels like on TV home repair shows, our is that more expensive unit?

I work for a engineered plastics company and we only use IR only to measure temp on a metal surface that it has been calibrated to. NEVER on a liquid. Search the site for my postings on a good digital thermometer that's only about. $20.

I use a metal shaft/probe with digital readings in plastic. I do have to make sure its not on C or Hold!

I like it though because I use it to stir the warming plastic while getting a read on the temp.

I have compared the readings for from my $39 IR Thermometer and my $20 digital and the digital is far more accurate.  IR can only measure surface temp.  IR is also vulnerable to reflected IR radiation which can give inaccurate readings.  Since going exclusively with digital I have had almost no episodes of overheating the plastic.
