About ten years ago a friend went moose hunting and scored a dandy. He had it processed into steak, roasts, ribs, chops, burger...you name it. he had it made. Cost the guy about 600 dollars to process it all. His wife didn't care for the stuff...any of it. She said it smelled up the kitchen while it was cooking. After about a month she made him get rid of it. I gave him $300 to help defray the processing costs and came home with about 700 pounds of nice meat. Moose ribs smoked and finished in a damp oven are out of this world. I'd love to give buffalo a test run once.
